Rousseau sisters are the new Culinary Directors of Negril’s Rockhouse Restaurant

The iconic, award-winning Rockhouse Hotel, in Negril, Jamaica  will now have the services of beloved Kingston-based chefs Michelle & Suzanne Rousseau, known as the Rousseau Sisters, as the new Culinary Directors of Rockhouse Restaurant, Negril’s premier fine-dining destination.

 Their new culinary program officially launches the first week of June 2026, introducing a brand new menu and a refreshed identity for Rockhouse Restaurant—distinctly Caribbean with Mediterranean influences—while honouring its rebellious spirit and legacy.

A launch event is planned for the weekend of June 5th – 6th, part of the Rockhouse Foundation’s Coastal Culinary Weekend at Rockhouse Hotel at Skylark Negril Beach Resort in Negril. The two-day event brings together the Rousseau Sisters, Miss Lily’s culinary director and cookbook author Andre Fowles, and MICHELIN Young Chef Award recipient India Doris, for an immersive weekend of dinner parties, local tours, and conversations celebrating Jamaican cuisine and culture. 

☀️ WHO: The Rousseau Sisters, acclaimed chefs, restaurateurs, cookbook authors and television personalities, are renowned for preserving the stories and culture of Jamaica through the island’s foodways and historic venues. They have established themselves as leading authorities on Caribbean cuisine and heritage, with beloved dining concepts including Two Sisters Jamaica and their former restaurant, Summerhouse, both in St. Ann. Working alongside Rockhouse Restaurant’s executive chef, Jermaine “Bagga” Forrester, and his team, the Sisters will bring their signature elevated yet approachable style, highlighting the elements that define Jamaican cuisine: spices, smoke, and local ingredients, reimagined in fresh and exciting ways.

⛵ MENU: The new menus will feature thoughtful dishes in the Rousseau Sisters’ signature coastal Mediterranean style, like Curried Ackee Wonton with Papaya Ginger Sauce, Cheesy Callaloo Dip, Salt Cod Croquetas, Rockhouse Eggplant and Plantain Parmesan, and Callaloo Tortelli, among others. Guests can expect some of Rockhouse’s signature dishes to remain, including the Coconut Shrimp and Chicken Under a Brick, alongside expanded plant-based options. Many ingredients are sourced from Rockhouse’s on-site hydroponic greenhouse and farm and local fishermen.
