‘Cocohella’ cocktail

Ingredients:
2 oz Appleton Estate 8-Year-Old Reserve Rum
1½ oz coconut syrup
1½ oz guava juice
½ oz lime juice
Instructions:
- Add all ingredients to a shaker with ice and shake mixture together
- Lather rim of a rock glass with coconut syrup and dip glass in coconut drops
- Pour mixture in glass with ice
- Garnish glass with a slice of dehydrated lemon or mint
The ‘Passion of Joy’ cocktail

Ingredients:
1.5oz Appleton 12 Year Old Rare Casks Rum
1.5oz passion syrup
0.5oz lime juice
0.5oz pimento syrup
Instructions:
- Add all ingredients to a shaker with ice and shake for mixture
- Pour mixture in a martini glass or coupe glass (no ice)
- Garnish with any edible flower

‘Indulgence’ cocktail

Ingredients:
2oz bacon brown butter
Appleton Estate 8 Year Old Reserve Rum
0.5oz simple syrup
0.5oz lemon juice
2-4 dashes of bitters
1oz dry sparkling wine
Instructions:
- Add bitters, simple syrup, lime juice and rum to shaker with ice
- Thoroughly shake mixture together then pour over fresh ice in a rock glass then add dry Sparkling Wine on top
- Add 1 strip of candied bacon and lime twist for garnishing
Ever heard of a pork infused drink? Well this is it. An elevated cocktail that explores techniques of fat-washing. This is a daring mix: a fat-washed Appleton Estate 8-Year-Old Reserve Rum base, with a dash of serum and lemon juice and Angostura bitters, topped off with a dry champagne and candied bacon.

Ingredients:
6 Otaheite apple slices
2 strips Scotch Bonnet pepper
1.5oz Appleton Estate 12YO Rare Casks Rum
1oz lime juice
0.5oz simple syrup
A splash of ginger extract
1oz sour cherry liqueur
Instructions:
- Muddle apple slices and scotch bonnet pepper
- Add rum and all other ingredients
- Add mixture to shaker cup with ice
- Strain and serve mixture over a rock glass with ice
