

Since Uncorked expanded its footprint with the launch of Chop’d, a fresh food concept designed to provide high-quality, customisable “salady tings” the salad bar has been all the rave.
The venture, part of the Group Foods Division, is spearheaded by Katharine Evelyn, who sat down with Our Today to share the company goals and reception to their offering of freshness and premium ingredients.
A fresh take on healthy eating
Chop’d offers an extensive menu of salads, grain bowls, sandwiches, and customisable meal options, all made from scratch daily. Evelyn highlighted that all dressings are prepared in-house using high-quality ingredients, including olive oil, while proteins such as chicken, salmon, and shrimp are roasted and prepared on-site.

“We try to bring the highest quality product to customers,” Evelyn explained to Our Today, noting that the restaurant sources fresh produce multiple times a week from local farms. While not all ingredients are organic, the focus remains on freshness and quality. ” Everything we do is from scratch. All our dressings are made in-house.”
“The point is to give the guests the best, you know, the best quality quality premium,” she added. “Something they would do at their home for their family. Here, you know, in ten minutes you walk out the door. So the motivation behind this is to give quality products, food that’s good for you, healthy,”
A Fresh dining experience

One of Chop’d’s defining features is its highly customisable menu. Customers can choose from signature salads or build their own by selecting bases, toppings, and proteins. Portion sizes for proteins are deliberately smaller to allow for variety, enabling diners to mix and match items such as chicken, shrimp, or salmon in a single meal.
“The idea is you’re supposed to be able to eat your salad with just a fork,” Evelyn said, explaining that everything is chopped for easy consumption since everything is both portioned and diced
Seasonal specials and expanding offerings

To keep the menu interesting, Chop’d regularly introduces new items based on customer feedback. Popular post specials, such as the Vietnamese-inspired chilli garlic rice noodle bowl, have become permanent fixtures. In line with seasonal trends, an Easter as well as a Carnival-themed salad featuring a mango coconut rum dressing will be added to the menu.
“We always want to keep things fresh and exciting,” Evelyn said, hinting at further menu expansions and the potential for additional Chop’d locations in the future.
Growth and local support

Chop’d’s success and vision are a part of Uncorked’s expansion, including its newly opened Drax Hall location in Ocho Rios—the largest Uncorked establishment to date. The brand continues to support local artisans by offering locally made products such as kombucha, kimchi, and gourmet sausages.
On a mission to offer Jamaicans healthier food options, Chop’d provides a convenient yet premium alternative to traditional fast food.
With its focus on quality, flexibility, and fresh ingredients, the new eatery is quickly carving out a place for itself in Jamaica’s food scene.
