Happy Cinco de Mayo!

Each year on the 5th of May, Cinco de Mayo is celebrated in Mexico and the US to commemorate Mexico’s victory in 1862 over the French troops which is also known as the Battle of Puebla Day.

The festivities associated with the day are often misunderstood as Mexican independence day, which is observed on September 16 of each year.

This day is aimed at celebrating the Mexican cultural heritage and includes a host of festivities ranging from parades, mariachi music, street foods, dancers wearing brightly coloured ribbons and dresses and other festivities.

While this is recognised as a Mexican holiday, Cinco de Mayo is not widely celebrated in Mexico. It is mostly celebrated in the United States where there is a large Mexican population.

Ways to celebrate Cinco de Mayo locally

Cinco de Mayo is often associated with frolicking and enjoying popular Mexican dishes such as tacos, burritos, tequila shots and beers.

While Jamaica does not have a large Mexican population, many Jamaicans have grown to love Mexican delicacies.

Our Today has some easy recipes that can help you get into the grove while tantalizing your taste buds this Cinco de Mayo day!

Jerk chicken Taco

Ingredients

  • 1 1/2 tbsp Jerk seasoning of your choice
  • 3 large chicken breast
  • 1 lime
  • 1/2 cup diced tomatoes
  • 8 taco tortillas
  • 2 cups shredded lettuce
  • 1/2 cup shredded cheese (optional)
  • 1/3 cup mayo

Instructions

  • Season chicken breast with jerk season
  • Leave to marinate for 15 to 20 minutes
  • Cook chicken over medium heat for 4 to 5 minutes
  • Shredd chicken into strips
  • Combine chicken with mayo and jerk seasoning
  • Assemble the taco with shredded lettuce, then add chicken, add mayo and shredded cheese

Pineapple Margarita

Ingredients

  • 1 1/2 cups lime juice
  • 4 cups pineapple juice
  • 2 cups white tequila
  • 1/2 cup diced pineapple for garnish
  • Kosher salt for the glass
  • 1/2 cups ice

Instruction

  • rim glass with Kasher salt for garnish
  • add pineapple juice, tequila and ice to the shaker
  • pour mixture to glass then garnish with pineapple
